It was pretty challenging as well as impossible to restore your iDevice without connecting your device to iTunes. Now, it has become possible with Posixninja which brought some really great and awesome tools for easily restoring your iPhone OS without using iTunes. There are two tools for restoring and activating iPhone without connecting to iTunes by Posixninja. One tool is iDeviceActivate and other is iDeviceRestoring. You need to have these software in your iPhoone to restore the OS to previous version without iTunes.
iDeviceActivate: This is an awesome tool developed by Posixninja. It allows idevices to get activated without connecting them to iTunes.
iDeviceRestoring: This is another awesome hacking tool that is powerful and is capable to restore IPSWs without connecting to iTunes. It can be used to upgrade iPhone, iPad, and iPod touch firmware without flashing. It will also not affect your baseband which has been a big problem for iphone users who got their iPhone 3G and 3GS locked due to this.
